Salad

1/4 watermelon
3 oz. feta cheese, block
1/4 cup extra virgin olive oil
3 Tbsp. mint, chopped
1/4 red onion, shaved
1 handful arugula
Kosher salt
Black pepper
3 Tbsp. red wine vinegar

 

Blueberries

1 pint blueberries
1 cup apple cider vinegar
1 cup sugar
1 Tbsp. allspice, whole
1 tsp. chili flakes
1 Tbsp. coriander seeds


  • Get pickling liquid ready for Blueberries: combine apple cider vinegar, sugar, allspice, chili, coriander, and salt into a pot and bring to a boil. Shut it off and throw blueberries in. If blueberries float, put plate on top to weigh them down.  
  • Remove outside of watermelon. Cube the watermelon. Cut the feta into cubes. Combine the watermelon, feta, olive oil, chopped mint, red onion, salt, pepper, and red wine vinegar. Mix blueberries into it.
  • Garnish with a bit of arugula on top.
