1 cup rolled oats
1 cup Chobani Greek Yogurt, non-fat plain
2 eggs
2 tsp. chia seeds
1 tsp. flaxseeds
4 Tbsp. coconut oil


Berry Compote

1/2 cup strawberries, halved
1/4 cup blackberries
1/4 cup raspberries
1/2 lemon, zested
4 Tbsp. brown sugar
Pinch of salt

  • For the Berry Compote: combine all ingredients in a saucepot and cook over medium heat until thickened.
  • For the Pancakes: place oats in a blender and whirl until pulverized.
  • Add all the other ingredients and whirl, keeping flaxseeds intact.
  • Heat coconut oil on a griddle or grill, and place dollops of batter onto griddle, cook until golden on both sides.
